Keto Chocolate Cookies

For Mother’s Day I was able to make my mom some Keto friendly cookies so she could enjoy something sweet after her steak dinner that we made for her too.

1 1/2 cups almond flour

1/2 cup cocoa powder

1 teaspoon salt

1 teaspoon baking powder

3/4 cup keto friendly sweetener (generally monk fruit sweetener but I cheated a bit and used coconut sugar)

2 eggs

1 teaspoon vanilla extract

Preheat oven to 350 degrees and line a cookie sheet with parchment.

Add the almond flour, cocoa powder, salt, and baking powder to a bowl. Whisk until thoroughly combined. Set aside.

Cream the butter and sweetener using a mixer. Beat until light and fluffy.

Mix in eggs and the vanilla.

Stir in the flour mixture, just until incorporated.

Scoop out 2-3 tablespoons of batter (I used a ice cream scoop.) Note that these cookies will spread a little so keep them a couple of inches apart on the baking sheets.

Bake for 13 minutes until just set. The cookies will be very soft, but will firm up as they cool.

Also if you’re not on a keto diet adding a roasted marshmallow is super fun!
