5-8 potatoes (depending on how many people you’re feeding), chopped
1 onion, chopped
Himalayan Salt, black pepper, dried rosemary, oregano, and thyme
Cheddar cheese, grated (as much as you like!)
Preheat oven to 400 fahrenheit, line a jelly roll pan with parchment paper. Place the chopped potatoes and onion on the parchment and drizzle with olive oil. Sprinkle your seasonings on to taste and stir around with a spoon.
Bake for 30-35 minutes until soft and browned. Grate sharp cheddar cheese all over.
